Creative Pot Brownies: Part II

 

Halloween may be over, but the season of gorging on sweet treats is just beginning. From now until January 1st, it’s time to put away the scale and indulge in all the holiday cocktails, roasts, and desserts your heart desires. And in the spirit of the season, we’ve brainstormed some fun and easy ways to reinvent the cannabis-infused brownie. Edibles have truly gone gourmet in recent years, and we don’t think the classic old pot brownie should be left behind!

Last month, we focused on some rather traditional brownie recipes, so we’re being a little more creative today! With beer, bacon, and Oreos, these brownies are different yet delicious. They’re the perfect treat for an adult holiday party, or for kicking back on the couch after a day of holiday shopping. As stated last month, each of these brownies can be made from a variation on the same simple recipe, which requires cannabis-infused butter or oil (click the link for recipes). It can be purchased at a dispensary or made at home. Happy baking!

Peanut Butter with Pretzels and Stout

(Serves approx. 16)

Ingredients:

1/2 cup cocoa
1 cup flour
2 oz unsweetened chocolate, chopped
2 cups cane sugar
2 eggs
10 tablespoons peanut butter
1 cup stout
3/4 cup pretzels, lightly crushed

Instructions:

1. Preheat oven to 350º and lightly butter a 9” baking pan.
2. Bring stout to a boil and simmer to reduce to 1/3 cup.
3. Melt butter, unsweetened chocolate and cocoa over low heat.
4. Incorporate all other ingredients, with the exception of the peanut butter. 
5. Heat peanut butter in a microwave safe bowl for 10-15 seconds, or until just starting to liquify, and drizzle half of it on top of brownie mixture. Sprinkle 1/2 a cup pretzels lightly on top of brownie mixture and peanut butter.
6. Pour the rest of the brownie mixture on top. Drizzle with remaining peanut butter and sprinkle with remaining pretzels. 
7. Bake for 30-35 minutes. Allow to set for 30 minutes.
8. Cut into squares and enjoy!

Blazin’ Bacon

(Serves approx. 16)

Ingredients:

1 cup cannabutter
1/2 cup cocoa
1 cup flour
2 oz unsweetened chocolate, chopped
2 cups cane sugar
2 eggs
8 oz bacon
2 tablespoons brown sugar

Instructions:

1. Preheat oven to 350º.
2. Spread bacon onto a baking sheet topped with a wire cooling rack, so that as the bacon cooks, the fat drips through.
3. Sprinkle with brown sugar to cover and bake 20 minutes, until slightly crisp. Allow to cool and chop coarsely. 
4. Lightly butter a 9” baking pan for the brownies.
5. Melt butter, unsweetened chocolate and cocoa in a saucepan over low heat.
6. Incorporate all other ingredients except for bacon.
7. Pour into  baking pan, top with the chopped bacon, and bake for 30-35 minutes. 
8. Allow to set for 30 minutes.
9. Cut into squares and enjoy!

Vegan Peanut Butter Oreo

(Serves 10-14)

Ingredients:

3/4 cup cannabis infused coconut oil
1/2 cup cocoa
1 cups cups raw sugar
1/4 cup flour
2 flax eggs
1 teaspoon vanilla
Approx. 20 0reos (crushed)
8-10 tablespoons peanut butter
 
Instructions:
 
1. Preheat your oven to 325º. Grease an 8x8 baking pan.
2. Melt butter in a saucepan over medium heat and stir in cocoa powder.
3. Transfer to mixing bowl, allow to cool, and combine combine with eggs and vanilla.
4. Combine dry ingredients in a separate mixing bowl. 
5. Combine wet and dry ingredients, stir until smooth.
6. Heat peanut butter in a microwave safe bowl for 10-15 seconds, or until just starting to liquify.
7. Pour 1/2 brownie mixture into baking pan, drizzle peanut butter onto mixture and lightly sprinkle crushed Oreos on top. Top with remaining 1/2 of brownie mixture.
8. Bake for 30 minutes. Allow to set for 30 minutes.
9. Cut into squares and enjoy!
